Kai Choi, also known as Mustard Greens are frequently mixed with milder greens as salad in oriental cuisine. Kai Choi leaves are a fair grass green and it has a bitter/peppery taste. Kai Choi can be boiled, steamed, stir-fried, combined with other greens and used in soups. It can also be eaten raw as part of a salad, similar to the western mustard green.
